This super quick last-minute leftover croissant brittle/biscotti that you can whip up in under an hour, will wow your secret-Santa this Christmas
Ingredients:
Frozen* Half-day-old (or 2 or 3-day-old) Croissant - great because you get to eat the other half.
100ml Cream
80g Sugar
100g Dark Chocolate
1/2t Coconut Oil or Cocoa Butter
2 big pinches of Flaky Sea Salt
*pop the croissant in the freezer the night before
Directions:
Step 1: Preheat your oven to 150°C fanbake and line a baking tray with baking paper.
Step 2: Slice the frozen croissant into very thin (5mm) slices and set aside.
Step 3:Place the cream, sugar and salt in a saucepan and warm over low heat, whisking to dissolve the sugar and salt.
Step 4: One slice at a time, carefully pick up the croissant thins and coat them in the warmed cream. Drain off any excess, and arrange the slices in one layer on the lined baking tray.
Step 5: Sprinkle the cream-coated slices with a little extra sugar and place in the oven to bake until they reach a medium to dark golden brown colour. This will take longer than you expect. Start with 30 minutes on the timer and check them at the 30-minute mark. If they need a little longer, I would recommend checking them every 5 minutes until they achieve that lovely caramelised colour. Remove from oven and let croissant bites cool.
Step 6: Combine chocolate and coconut oil or cocoa butter and melt in the microwave or over a double boiler.
Step 7: Take a cooled caramelised croissant slice and dip one end into the melted chocolate. Repeat with the remaining croissant biscotti slices.
Step 8: Pop in the fridge overnight. Wrap them up pretty and wha lah - one of the easiest and cheapest ways to give a little chocolate, caramelly Christmas cheer this year.
Or…. store it in an airtight container at your house and snack away.
