Pancakes!

I wouldn’t usually buy a packet of pancakes. In fact, I very rarely eat pancakes and when I do I make them. But in the interest of getting creative with food on the app this week, I thought why not? So here are the 2 ways I ate the pack of pancakes. To be honest, they're kinda the same thing slightly tweaked, but mixing it up was fun. The first was as a decadent dessert and the sandwich one I ate twice as a post-walk weekend brunch. These pancakes would’ve also been great with some lemon/lime juice and sugar. 


These barely need a recipe, but just in case!



Banana Pancakes


1 banana per person (NJk Supermarket)

2 Pancakes per person (Four Square)


Tsp Butter/Oil


  1. Heat butter or oil in a frying pan on a low heat. Peel the banana and slice legthways. Add the banana and allow to fry on a low heat for a few minutes. The banana will start to change colour around the sides when it’s ready to be flipped. Flip and cook so that it’s brown and caramelised on both sides. Remove from the pan when done.


  2. When the banana is done, lightly fry the pancakes on each side for 1-2 mins to heat through.


Serve by topping the pancakes with the banana.


Optional: add maple syrup/golden syrup or honey to your taste. 



Peanut Butter & Banana Pancake Sandwich


1 banana per person (NJk Supermarket)

2 Pancakes per person (Four Square)

Peanut Butter (I like Fix and Fogg)


  1. Start by adding the pancakes to the toaster on the lowest heat. If they’ve been in the freezer you might like to go for a 2-3 setting. You don’t want to toast them, but gently warm them through.


  2. While the pancakes are toasting slice the banana. Once the pancakes are done, add a thin layer of peanut butter to each of them top on pancake with the sliced banana, add the other pancake to make and sandwich and enjoy!  


These were accompanied by the Minor Figures Coffee which was the perfect pairing!
